Get ready to embark on a culinary journey as we guide you through the preparation of this crispy and savory namkeen.
2 cups besan (gram flour)
2 medium-sized potatoes, boiled and mashed
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1/2 teaspoon carom seeds (ajwain)
Salt to taste
Oil for frying
Step 1: Preparing the Dough
In a mixing bowl, combine the besan, mashed potatoes, red chili powder, turmeric powder, carom seeds, and salt.
Mix the ingredients well to form a crumbly dough-like consistency. Adjust the besan quantity if needed to achieve the right texture.
Step 2: Frying the Aloo Bhujia
Heat oil in a deep pan or kadai over medium heat.
While the oil is heating, prepare a sev maker or chakli press with the thin sev plate attachment.
Once the oil reaches the desired temperature, take a portion of the dough and fill it into the sev maker.
Press the dough through the sev maker directly into the hot oil, moving in a circular motion.
Fry the aloo bhujia until they turn golden brown and become crispy.
Use a slotted spoon to remove the bhujia from the oil and place them on a paper towel to drain excess oil.
Repeat the process with the remaining dough, frying the bhujia in batches.
Step 3: Cooling and Storing
Allow the aloo bhujia to cool completely before transferring them to an airtight container.
Ensure the container is tightly sealed to retain their crunchiness.
Aloo bhujia can be stored for up to a few weeks when stored properly.
